The Only Ackee & Saltfish Recipe You'll Ever Need

The secret to a proper ackee and saltfish is starting with the right ackee. Grade A1 pods hold their structure during cooking — they won't dissolve into a mash when sautéed with scotch bonnet, onion, and thyme.

What You Need (serves 2–3)

One tin of Grade A1 ackee (drained), 200g salted codfish (soaked overnight and flaked), half an onion (sliced), 1 scotch bonnet (whole or chopped), 2 cloves garlic, fresh thyme, 1 tomato, black pepper, cooking oil.

Method

Boil and flake your saltfish, removing skin and bones. In a heavy pan, sauté onion, garlic, scotch bonnet, and thyme in oil until soft. Add tomato and cook down 2 minutes. Add saltfish, fold gently. Finally, add ackee and fold — never stir — to keep the pods intact. Serve with boiled green banana, fried dumpling, or hard dough bread.

The pod should hold its shape. If it's mush before it hits the pan, the tin wasn't Grade A1.

What's the difference between Dunn's River and Grace Domestic?

Dunn's River was created by Grace specifically for the UK export market. It is not what Jamaicans buy at home. Grace Domestic — the version sold in Jamaican supermarkets and used in Jamaican homes — has a different pod selection and firmer texture better suited for traditional cooking. We ship the domestic version.

Is ackee legal to import into the UK?

Yes. Canned, processed ackee is fully legal in the UK and does not fall under the fresh ackee import restrictions. All our products are commercially canned and export-certified, meeting UK food safety standards. Fresh ackee is regulated due to the natural toxin hypoglycin A present before the fruit opens — but this is fully neutralised in the canning process.
